The Mighty Sweet Potato

Fresh herbs and spicesIt’s all a bit soggy, gloomy and autumnal in Oxfordshire today! Lots of people feeling under the weather with colds and coughs…time for a superfood recipe.
This one is inspired by Jamie Oliver’s new Superfood series. Yeh I know Jamie jumps on the healthy eating bandwagon…but this is my kind of bandwagon.
So today: sweet potatoes! Vit A, C and immune boosting.
We got them in our veg box this week and had them with our Sunday roast at the weekend. With some left over tonight’s dish is chicken cacciatore with SP.


You’ll need onion, leek, garlic, rosemary, bay leaves, sweet potatoes, mushrooms, tinned toms, olives (optional), chicken breast or thighs and (whoop whoop) red wine.


Oven on at 180 then gently pan fry your onion, leek, garlic, rosemary and bay leaves. Chop your sweet potatoes into chunks and add along with mushrooms. Then add your chicken (whole pieces). Add your red wine (anything up to 250ml) and your tinned tomatoes. Add some water to keep it all juicey and add the olives if you like them. Simmer gentle then pop into the oven for about an hour. Ahh I can feel my cold disappearing with the very thought of this dish :0)


If you need a few extra carbs to go with it, serve with couscous, rice or some lovely wholemeal or seedy bread to dip.
