Immune boosting soup

The weather is promising to perk up in the next few days, but for those of us staring out at rain, thinking of the cold days and nights to come, here’s an immune boosting soup recipe to warm you up and give you some super powers!

Now I know beetroot is not everyone’s favourite veg but if you choose the ‘golden’ variety and then pop them in the oven they loose their evil taste and retain some of their super goodness!

So…Roasted Squash & Beetroot Soup

Chop up a squash, 4-6 medium sized red/golden (red if you love beets, golden if not so keen) beetroot, an onion and hurl them in the oven (180) for around 40 mins (or until lovely and soft). With about 10 mins to go, add in some garlic cloves (4 should do).

Get together some stock or bouillon (chicken or veg) – 1 or 2 pints and put to one side in a jug.

Once the veg are ready, deploy the blender and and mash up into a lovely puree. Then add the stock to get it to the consistency you prefer.

Serve, season to taste and if you fancy pop on some fresh basil, a drizzle of olive oil or greek yogurt. EAT!!

You can also spice it up a bit with cumin, coriander if you wish.
